Four Seasons Hotel Bangkok welcomes Pastry Chef Nicolas Lambert for a limited‑time pop‑up and Afternoon Tea

Four Seasons Hotel Bangkok at Chao Phraya River is partnering with internationally recognised pastry chef Nicolas Lambert for a seasonal pop‑up and a special Afternoon Tea service.


Lambert, who currently leads the pastry department at Four Seasons Resort Dubai and has previously worked in Hong Kong and St. Petersburg, will join forces with Executive Pastry Chef Andrea Bonaffini to create a menu that blends artistic presentation with locally sourced, seasonal ingredients.


The pop‑up, located in Café Madeline, runs from 12 September to 10 December 2025 and will feature Lambert’s signature pastries and confections, available for both take‑away and dine‑in.


The collaborative Afternoon Tea will be served daily in The Lounge from 14:00 to 17:00. The price is THB 1,800++ per guest.


Savory course:

  • Hotate scallop ceviche with orange and yuzu
  • Heirloom tomato with mint, Bronte pistachio and stracciatella
  • Blue crab salad with mango, grilled avocado and Osietra caviar
  • Smoked duck foie gras with raspberry‑beetroot compote
  • Japanese flying squid with cucumber and smoked potato foam
  • Balik of salmon with sunchoke and pickled salmon roe
  • Black truffle croque‑monsieur

Sweet course:

  • Acacia honey & Thai mango “Bee”
  • Tahitian vanilla caramel & pecan choux
  • Pistachio & strawberry tart
  • Three‑chocolate cake
  • Surprise brioche with chocolate, caramelised cocoa nibs and Tahitian vanilla
  • Mango‑passion and Hokkaido milk soft‑serve

Lambert, named Asia’s Best Pastry Chef in 2018 and creator of the celebrated “Bee” series, emphasizes core ingredients while delivering visually striking desserts.
