
Tapasake Maldives, the signature restaurant situated on the private island of the One&Only Reethi Rah resort, will welcome Chef Norimasa Kosaka for a series of exclusive culinary events in March 2026. The programme includes a collaborative “four‑hands” dinner with resident chef Ahmed Jameel and a dedicated sushi night at the over‑water venue.
Blending Japanese techniques with Mediterranean flavours, Tapasake Maldives also operates outposts in Dubai, Mauritius and Montenegro. The upcoming events mark a professional reunion for Chef Kosaka and Chef Jameel, who previously worked together at the resort.
Chef Kosaka, a former member of the Tapasake team from 2007‑2009, now runs Mimasaka NORIMASA in Okayama, Japan, where he focuses on contemporary Japanese cuisine infused with French influences. Originally from Osaka, he brings more than a decade of international experience in sushi and hot‑dish preparation. Chef Jameel, a native of the Maldives, honed his culinary style under Kosaka’s mentorship, merging traditional Japanese methods with modern approaches.
The partnership reflects the two chefs’ shared history at Tapasake, including their role in evolving the restaurant from a classic Japanese concept to a more eclectic menu that incorporates Peruvian and Mediterranean elements. Chef Jameel credits much of his technical expertise in Japanese cooking to his time alongside Chef Kosaka.
During the four‑hands dinner, the chefs will present a joint menu that showcases their individual signatures. Chef Kosaka will offer modern Japanese creations such as sashimi tartare and slow‑steamed abalone with lobster, while Chef Jameel will contribute dishes that fuse Japanese and Mediterranean influences, including truffle‑crusted sea bass with miso. The duo will also collaborate on a wagyu‑based plate.
