Best

Organic produce and sustainable ethics are at the heart of this Italian restaurant in Nørrebro. Expect mozzarella made daily from raw local milk and charcuterie made from local pigs. The restaurant prides itself on sustainable cuisine and ethics.

Amass

This fine dining restaurant on Refshøløen in Copenhagen is well known for its sustainable and environmentally responsible approach. Their focus is on everything from food waste to organic sourcing and urban agriculture.

Restaurant Alimentum in Aalborg puts sustainability at the heart of its menu, using its own organic produce from close to the city and a nose-to-tail philosophy. Expect honey from our own hives and premium quality organic quail eggs.

Molskroen

Molskroen also received the Michelin Guide sustainability emblem in 2020 and is known for its commitment to local sourcing. Pickling and fermentation extend the shelf life of food; the leftovers are turned into animal feed, and the menu includes fresh sea oysters from Limfjord and asparagus picked the same day from local farms.

Moment

Moment, a restaurant in Ronda, 30 minutes from Aarhus, is also known for its sustainable practices. These include design elements (locally sourced Danish designer chairs and a building that uses straw bales) as well as a menu featuring heirloom plants and produce grown in their own permaculture garden.
